Ingredients

  • 1 teaspoon baking powder

  • 2 teaspoons ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • 1 teaspoon pumpkin pie spice
  • 1 cup old-fashioned oats

For the Cinnamon Cream Cheese Frosting:

  • ½ cup softened cream cheese
  • ¼ cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together butter, white sugar, and brown sugar until light and fluffy. Mix in pumpkin puree, egg, and vanilla extract.
  3. In a separate bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, cloves, pumpkin pie spice, and oats. Gradually mix dry ingredients into wet ingredients until combined. Avoid overmixing.
  4. Drop rounded tablespoons of dough onto prepared baking sheets. Flatten slightly and bake for 10-12 minutes, or until edges are lightly browned. Let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  5. To make the frosting, beat cream cheese and butter until smooth. Gradually add powdered sugar, cinnamon, and vanilla extract, mixing until creamy. Refrigerate for 15 minutes if the frosting is too soft.
  6. Spread or pipe frosting onto cooled cookies.
