Description

Make irresistible Puff Puff, a beloved West African snack that’s golden brown, soft, and fluffy. Perfect for parties, family treats, or a comforting indulgence, this recipe uses simple pantry ingredients and straightforward steps to create a crowd-pleasing delight. Try variations like spiced or stuffed puff puff for a creative twist!

Ingredients

  • 250g of flour
  • 2 teaspoons of yeast (powdered or activated with lukewarm water, as needed)
  • 1/2 teaspoon nutmeg
  • 1/3 cup granulated sugar (adjust to taste)
  • Pinch of salt
  • Lukewarm water
  • Vegetable oil (for frying)

Instructions

  • Prepare the Dry Ingredients:
Combine flour, nutmeg, powdered yeast (if using), sugar, and salt in a mixing bowl. Mix well.
  • Mix with Water:
Gradually add lukewarm water, stirring continuously until smooth. If using activated yeast, mix it with the water first, then combine with the batter. The consistency should be thick but spoonable.
  • Allow to Rise:
Cover the bowl with aluminum foil or a towel and let the batter rise in a warm place for 45 minutes, until it doubles in size and forms air bubbles.
  • Heat the Oil:
Heat vegetable oil in a deep pot over medium heat until hot but not smoking.
  • Fry the Puff Puff:
Drop portions of the batter into the hot oil using a spoon, hand, or ice cream scoop. Fry in small batches, turning occasionally, until golden brown.
  • Drain and Serve:
Remove puff puff from the oil and drain on paper towels. Serve warm or with toppings like powdered sugar, honey, or spicy sauce.

Notes

  • To test if the oil is ready, drop a small amount of batter into it. If it sizzles and rises to the surface, the oil is hot enough.
  • Avoid overcrowding the frying pan to ensure even cooking.
  • For extra fluffiness, make sure the batter has ample time to rise.
