Ingredients

  • 3-pound beef eye of round roast
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and freshly ground black pepper to taste

Instructions

  1. Preheat the Oven: Set your oven to 500°F (260°C).
  2. Season the Roast: Mix garlic powder, onion powder, salt, and black pepper in a bowl. Rub evenly over the roast.
  3. Prepare for Roasting: Place the roast on a rack in a roasting pan, fat side up. Do not cover or add water.
  4. High-Temperature Roast: Place the pan in the oven, then immediately reduce the heat to 475°F (245°C). Roast for 7 minutes per pound (21 minutes for a 3-pound roast).
  5. Slow Cooking: Turn off the oven and let the roast sit inside for 2.5 hours without opening the door.
  6. Check for Doneness: The internal temperature should be at least 145°F (65°C) for medium-rare.
  7. Rest and Slice: Let the roast rest for 15-20 minutes, then slice thinly against the grain and serve.
