For the Cheesecake Filling:

  • 24 oz (3 blocks) cream cheese, softened

  • 2 tbsp powdered sugar
  • Chopped pistachios for garnish

Instructions

1️⃣ Prepare the Crust:

  1. Preheat oven to 325°F (165°C).
  2. In a medium bowl, mix graham cracker crumbs, melted butter, and sugar.
  3. Press the mixture into the bottom of a 9-inch springform pan.

  3. Mix in the vanilla extract.
  4. Add eggs, one at a time, mixing just until combined.
  5. Slowly pour in the heavy cream and mix until smooth.
  6. If using, fold in the chopped pistachios for added texture.

3️⃣ Bake the Cheesecake:

  1. Pour the filling over the cooled crust.
  2. Bake for 50-60 minutes, or until the center is just set and slightly jiggles.
  3. Turn off the oven, crack the door open, and let the cheesecake cool inside for 1 hour.
  4. Transfer to the refrigerator and chill for at least 4 hours (overnight is best).

4️⃣ Make the Whipped Cream Topping:

  1. In a medium bowl, beat the chilled heavy cream and powdered sugar until stiff peaks form.
  2. Spread or pipe the whipped cream over the chilled cheesecake.

5️⃣ Serve and Garnish:
