Ingredients
- 1 cup almond flour
- 1/2 cup granulated sugar
- 1/4 cup shelled pistachios, finely chopped
- 2 large egg whites

- A pinch of salt
- Powdered sugar, for dusting
Instructions
- Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper.
- In a bowl, mix almond flour, sugar, pistachios, and salt.
- Beat egg whites in another bowl until soft peaks form. Gradually add almond and vanilla extracts, beating until stiff peaks form.
- Gently fold the dry mixture into the egg whites until combined.
- Scoop small mounds onto the baking sheet, spacing 2 inches apart.
- Bake for 15-18 minutes until edges are golden and tops are cracked.
- Cool on a wire rack and dust with powdered sugar before serving.
