Description

Ingredients

  • 1 cup almond flour
  • 1/2 cup granulated sugar
  • 1/4 cup shelled pistachios, finely chopped
  • 2 large egg whites
  • 1 teaspoon almond extract
  • 1/2 teaspoon vanilla extract
  • A pinch of salt
  • Powdered sugar, for dusting

Instructions

  • Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper.
  • In a bowl, mix almond flour, sugar, pistachios, and salt.
  • Beat egg whites in another bowl until soft peaks form. Gradually add almond and vanilla extracts, beating until stiff peaks form.
  • Gently fold the dry mixture into the egg whites until combined.
  • Scoop small mounds onto the baking sheet, spacing 2 inches apart.
  • Bake for 15-18 minutes until edges are golden and tops are cracked.
  • Cool on a wire rack and dust with powdered sugar before serving.
