Ingredients
- 2 cups white chocolate chips
- 1 can (14 oz) sweetened condensed milk
- 2 tbsp unsalted butter
- ¼ cup pineapple juice (from canned pineapple)
- ½ cup crushed pineapple, drained
- 1 tsp vanilla extract
- ¼ tsp salt
- ½ cup maraschino cherries, chopped
- ¼ cup brown sugar (light or dark)
- ¼ cup chopped pecans (optional, for garnish)
Instructions
- Prepare the Pan – Line an 8×8-inch baking dish with parchment paper or grease it lightly.
- Melt the Fudge Base – In a medium saucepan over low heat, melt the white chocolate chips, sweetened condensed milk, and butter. Stir until smooth.
- Add Pineapple Flavor – Stir in the pineapple juice, crushed pineapple, vanilla extract, salt, and brown sugar. Mix until fully incorporated.
- Fold in Cherries – Gently fold in the chopped maraschino cherries.
- Set the Fudge – Pour the mixture into the prepared pan, spreading it evenly. Sprinkle chopped pecans on top (if using).
- Chill – Refrigerate for at least 2 hours until firm.
- Cut & Serve – Once set, lift the fudge out of the pan using the parchment paper and cut into small squares.
