This easy-to-make treat is perfect for potlucks, holidays, or anytime you crave a refreshing and creamy pineapple-flavored cake.

Ingredients

  • 1 box yellow cake mix
  • 1 can (20 oz) crushed pineapple (with juice)
  • ½ cup unsalted butter, melted
  • 2 cups powdered sugar
  • 1 package (8 oz) cream cheese, softened
  • 1 container (8 oz) whipped topping (e.g., Cool Whip)
  • ½ cup shredded coconut (optional)
  • ½ cup chopped pecans (optional)

Instructions

  1. Preheat & Prepare – Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Mix Cake Batter – In a mixing bowl, combine yellow cake mix with crushed pineapple (including juice). Stir until fully incorporated.

  5. Add Whipped Topping – Gently fold in whipped topping until fully combined.
  6. Frost & Top – Spread frosting over the cooled cake. Sprinkle with shredded coconut and chopped pecans if desired.
  7. Chill & Serve – Refrigerate for at least 1 hour before slicing and serving.
