Ingredients

Optional Toppings:

  • ½ cup shredded coconut
  • ¼ cup chopped pecans

Instructions

  1. Prepare the Cake Batter: Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish. In a large bowl, combine cake mix, undrained crushed pineapple, vegetable oil, eggs, and vanilla extract. Stir until smooth.

  2. Bake the Cake: Pour the batter into the prepared dish. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean. Cool completely on a wire rack.

  3. Prepare the Pineapple Layer: In a saucepan, melt butter over medium heat. Stir in sugar until dissolved. Add half of the crushed pineapple and simmer for 2-3 minutes. Let cool.

  4. Prepare the Cream Cheese Frosting: Beat softened cream cheese and powdered sugar until smooth. Fold in whipped topping until combined.

  5. Assemble the Cake: Spread the cooled pineapple mixture over the cake. Top with cream cheese frosting. Optionally, sprinkle with shredded coconut and chopped pecans.
