Ingredients

  • 1 pound chicken breast, cubed
  • 1 cup pineapple, cubed
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup jasmine rice
  • 2 cups chicken broth
  • 1 tablespoon soy sauce
  • 1 teaspoon ginger, grated
  • Salt and pepper, to taste
  • 1/4 cup green onions, sliced (for garnish)
  • 1 tablespoon sesame seeds (for garnish)

Instructions

  • Cook the Chicken:
    • Heat olive oil in a large skillet over medium heat.
    • Add cubed chicken and cook for 6-7 minutes until golden brown and cooked through.
    • Remove chicken and set aside.
  • Sauté Vegetables:
    • In the same skillet, add onion, garlic, and red bell pepper.
    • Sauté for 4-5 minutes until softened.
  • Add Pineapple:
    • Stir in pineapple cubes and cook for 2 more minutes.
  • Cook Rice and Add Seasoning:
    • Add jasmine rice, chicken broth, soy sauce, grated ginger, salt, and pepper.
    • Stir and bring to a boil.
  • Simmer:
    • Reduce heat to low, cover, and simmer for 18-20 minutes until rice is cooked and liquid is absorbed.
  • Combine and Garnish:
    • Return chicken to the skillet and stir to combine.
    • Heat through and garnish with green onions and sesame seeds before serving.

  • For extra flavor, use pineapple juice in place of part of the chicken broth.
