Ingredients
- 1 pound chicken breast, cubed
- 1 cup pineapple, cubed
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 cup jasmine rice
- 2 cups chicken broth
- 1 tablespoon soy sauce
- 1 teaspoon ginger, grated
- Salt and pepper, to taste
- 1/4 cup green onions, sliced (for garnish)
- 1 tablespoon sesame seeds (for garnish)
Instructions
- Cook the Chicken:
- Heat olive oil in a large skillet over medium heat.
- Add cubed chicken and cook for 6-7 minutes until golden brown and cooked through.
- Remove chicken and set aside.
- Sauté Vegetables:
- In the same skillet, add onion, garlic, and red bell pepper.
- Sauté for 4-5 minutes until softened.
- Add Pineapple:
- Stir in pineapple cubes and cook for 2 more minutes.
- Cook Rice and Add Seasoning:
- Add jasmine rice, chicken broth, soy sauce, grated ginger, salt, and pepper.
- Stir and bring to a boil.
- Simmer:
- Reduce heat to low, cover, and simmer for 18-20 minutes until rice is cooked and liquid is absorbed.
- Combine and Garnish:
- Return chicken to the skillet and stir to combine.
- Heat through and garnish with green onions and sesame seeds before serving.
