Peppermint Meltaways are buttery cookies with a light peppermint twist, perfect for holiday celebrations. These melt-in-your-mouth treats are easy to make and sure to become a festive family favorite.
Ingredients
Cookies:
- 1 cup butter, softened
- 1/2 cup confectioners’ sugar
- 1/2 teaspoon peppermint extract
- 1 1/4 cups all-purpose flour
- 1/2 cup cornstarch
- 1/4 teaspoon salt
Frosting:
- 2 tablespoons butter, softened
- 1 1/2 cups confectioners’ sugar
- 2 tablespoons milk
- 1/4 teaspoon peppermint extract
- 2–3 drops red food coloring (optional)
- Crushed peppermint candies for garnish
Instructions
- Cream Butter and Sugar: Cream butter and confectioners’ sugar until light and fluffy. Beat in peppermint extract.
- Mix Dry Ingredients: Whisk together flour, cornstarch, and salt in a separate bowl. Gradually add to creamed mixture, mixing until combined.
- Chill Dough: Cover and chill dough for at least 30 minutes.
- Shape Cookies: Preheat oven to 350°F (180°C). Shape dough into 1-inch balls and place 2 inches apart on ungreased baking sheets.
- Bake: Bake for 9–11 minutes until bottoms are lightly browned. Cool completely on wire racks.
- Prepare Frosting: Beat butter until creamy. Gradually mix in confectioners’ sugar, milk, peppermint extract, and food coloring (if using) until smooth.
- Decorate: Frost cooled cookies and sprinkle with crushed peppermint candies. Allow to set before serving.
