Description

Peanut Butter Potato Candy is a nostalgic, no-bake confection that originated during the Great Depression. Made with mashed potatoes, powdered sugar, and peanut butter, this sweet and fudgy treat is a testament to resourcefulness and simplicity. Perfect for holidays, gifting, or enjoying a taste of old-fashioned comfort!

Ingredients

  • 1 small russet potato, peeled and cubed
  • 1 tablespoon milk (optional, for consistency)
  • 1 teaspoon vanilla extract
  • 1 pinch salt
  • 45 cups confectioners’ sugar (adjust as needed)
  • ½ cup creamy peanut butter

Instructions

  • Prepare the Base: Mash the boiled potato until smooth. Let it cool completely.
  • Mix the Dough: In a bowl, combine mashed potatoes, milk (if using), vanilla extract, and salt. Gradually mix in confectioners’ sugar until a stiff, dough-like consistency forms.
  • Chill the Dough: Refrigerate the dough for about an hour to make it easier to handle.
  • Roll Out the Dough: On a surface dusted with confectioners’ sugar, roll the dough into a rectangular shape, about ¼-inch thick.
  • Add the Filling: Spread an even layer of creamy peanut butter over the dough, leaving a small border around the edges.
  • Form the Roll: Carefully roll the dough into a tight log, similar to a jelly roll.
  • Set the Roll: Wrap in wax paper or plastic wrap and refrigerate for at least an hour to firm up.
  • Slice and Serve: Once chilled, slice into ½-inch pinwheel-shaped pieces and enjoy!

Notes

  • If the dough is too sticky, add more powdered sugar a little at a time.
  • Store in an airtight container in the fridge for up to two weeks.
  • For longer storage, freeze in a single layer before transferring to a freezer-safe container for up to 3 months.
