Description

Peach Cobbler Cookies are the perfect fusion of classic Southern dessert flavors and the convenience of cookies. These handheld treats feature juicy peaches, warm cinnamon, and a buttery texture, making them a versatile addition to summer gatherings, snacks, or any sweet occasion.

Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, room temperature
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup diced fresh peaches
  • 1 teaspoon ground cinnamon
  • 1/4 cup granulated sugar (for topping)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
  3. In a large bowl, beat butter, granulated sugar, and brown sugar until light and fluffy.
  4. Mix in the egg and vanilla extract.
  5. Gradually incorporate the dry ingredients into the wet mixture until combined.
  6. Gently fold in the diced peaches.
  7. Drop rounded tablespoons of dough onto the prepared baking sheet.
  8. Mix cinnamon with 1/4 cup sugar and sprinkle over the cookie dough.
  9. Bake for 12-15 minutes until edges are golden brown.
  10. Cool cookies on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • For chewier cookies, underbake slightly and use more brown sugar.
  • Chilling the dough before baking can help control spreading.
  • Substitute fresh peaches with canned or frozen peaches (well-drained) if needed.
