Description

Delight in the nostalgic flavors of this Orange Creamsicle Cake! Moist, fluffy layers of orange-infused cake are topped with creamy vanilla frosting, creating the perfect dessert for summer gatherings, birthdays, or any sweet craving.

Ingredients

For the Cake:

  • 1 box orange cake mix (15.25 oz)
  • 1 cup orange soda or fresh orange juice
  • 1/3 cup vegetable oil
  • 3 large eggs

For the Filling and Frosting:

  • 1 box instant vanilla pudding mix (3.4 oz)
  • 2 cups cold milk
  • 1 tsp orange extract (optional)
  • 8 oz whipped topping (Cool Whip)

Optional Garnishes:

  • Orange zest or slices
  • White chocolate shavings

Instructions

  • Prepare the Pans:
Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • Mix the Batter:
In a large mixing bowl, combine the cake mix, orange soda (or juice), vegetable oil, and eggs. Beat on medium speed for 2 minutes until smooth.
  • Bake the Cakes:
Divide the batter evenly between the prepared pans. Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
  • Cool the Layers:
Let the cakes cool in their pans for 10 minutes, then transfer to a wire rack to cool completely.
  • Make the Frosting:
In a bowl, whisk together the pudding mix, cold milk, and orange extract (if using) until thickened. Gently fold in the whipped topping until smooth and creamy.
  • Assemble the Cake:
Place one cake layer on a serving plate. Spread a generous layer of frosting on top. Add the second cake layer and cover the top and sides with the remaining frosting.
  • Garnish and Chill:
Decorate with orange zest, slices, or white chocolate shavings if desired. Chill for at least 1 hour before serving.

Notes

  • For a gluten-free option, use a gluten-free orange cake mix.
  • Enhance the citrus flavor by adding a teaspoon of orange zest to the batter.
  • This cake tastes even better the next day as the flavors meld together.
