Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/4 cup orange juice
  • Zest of 1 orange
  • 1 cup grated carrots
  • 1/2 cup chopped walnuts (optional)

Instructions

  • Preheat the oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  • In a bowl, mix together the flour, baking powder, baking soda, salt, and cinnamon.
  • In another bowl, cream the softened butter and granulated sugar until light and fluffy.
  • Beat in the eggs one at a time, making sure each is fully incorporated before adding the next.
  • Stir in the vanilla extract, orange juice, and orange zest.
  • Gradually add the dry ingredients to the wet mixture, mixing just until incorporated.
  • Fold in the grated carrots and optional chopped walnuts.
  • Pour the batter into the prepared loaf pan.
  • Bake for 60 minutes or until a toothpick inserted into the center comes out clean.
  • Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

  • For a vegan version, swap the butter with plant-based butter and replace eggs with flax eggs or another egg substitute.
  • If you prefer a gluten-free version, use a gluten-free all-purpose flour blend.
  • Feel free to add other spices like nutmeg or ginger for a spicier flavor.
