Ingredients
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda

- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/4 cup orange juice
- Zest of 1 orange
- 1 cup grated carrots
- 1/2 cup chopped walnuts (optional)
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
- In a bowl, mix together the flour, baking powder, baking soda, salt, and cinnamon.
- In another bowl, cream the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, making sure each is fully incorporated before adding the next.
- Stir in the vanilla extract, orange juice, and orange zest.
- Gradually add the dry ingredients to the wet mixture, mixing just until incorporated.
- Fold in the grated carrots and optional chopped walnuts.
- Pour the batter into the prepared loaf pan.
- Bake for 60 minutes or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

- For a vegan version, swap the butter with plant-based butter and replace eggs with flax eggs or another egg substitute.
