Ingredients
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 tbsp Cajun seasoning (adjust to taste)
- 2 tbsp olive oil
- 1 small onion, finely chopped
- 1 red bell pepper, chopped
- 3 cloves garlic, minced
- 8 oz penne or fettuccine pasta
- 2 cups chicken broth
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- ½ tsp salt (adjust to taste)
- ¼ tsp black pepper
- Fresh parsley or green onions for garnish (optional)
Instructions
1. Season & Cook the Chicken
- Toss the chicken pieces with Cajun seasoning.
- Heat olive oil in a large pot over medium-high heat and cook the chicken for 4-5 minutes until no longer pink. Remove and set aside.
2. Sauté the Vegetables
- In the same pot, sauté onion, red bell pepper, and minced garlic for 2-3 minutes until softened.
3. Add the Pasta
- Stir in the pasta with the sautéed vegetables.
4. Pour in Liquids & Simmer
- Add chicken broth and heavy cream. Season with salt and black pepper.
- Bring to a boil, then reduce heat to a simmer. Cover and cook for 10-12 minutes, stirring occasionally, until the pasta is tender.
5. Finish the Dish
- Add the cooked chicken back to the pot along with Parmesan cheese.
- Stir and cook for another 2-3 minutes until the sauce thickens.
6. Garnish & Serve
- Top with fresh parsley or green onions if desired. Serve immediately.
