Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tbsp Cajun seasoning (adjust to taste)
  • 2 tbsp olive oil
  • 1 small onion, finely chopped
  • 1 red bell pepper, chopped
  • 3 cloves garlic, minced
  • 8 oz penne or fettuccine pasta
  • 2 cups chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • ½ tsp salt (adjust to taste)
  • ¼ tsp black pepper
  • Fresh parsley or green onions for garnish (optional)

Instructions

1. Season & Cook the Chicken

  • Toss the chicken pieces with Cajun seasoning.
  • Heat olive oil in a large pot over medium-high heat and cook the chicken for 4-5 minutes until no longer pink. Remove and set aside.

2. Sauté the Vegetables

  • In the same pot, sauté onion, red bell pepper, and minced garlic for 2-3 minutes until softened.

3. Add the Pasta

  • Stir in the pasta with the sautéed vegetables.

4. Pour in Liquids & Simmer

  • Add chicken broth and heavy cream. Season with salt and black pepper.
  • Bring to a boil, then reduce heat to a simmer. Cover and cook for 10-12 minutes, stirring occasionally, until the pasta is tender.

5. Finish the Dish

  • Add the cooked chicken back to the pot along with Parmesan cheese.
  • Stir and cook for another 2-3 minutes until the sauce thickens.

6. Garnish & Serve

  • Top with fresh parsley or green onions if desired. Serve immediately.
