Description

Ingredients

  • 1 lb smoked sausage (sliced)
  • 1 cup uncooked white rice
  • 1 ½ cups chicken broth
  • ½ cup BBQ sauce (your favorite!)
  • 1 tbsp soy sauce
  • 1 tbsp honey
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • 1 cup bell peppers (diced)
  • ½ cup onion (diced)
  • 1 tbsp olive oil
  • Salt & pepper to taste
  • Green onions for garnish (optional)

Instructions

  • Heat olive oil in a large pan over medium heat. Add the sliced sausage and cook until browned. Remove and set aside.
  • In the same pan, sauté the diced onions and bell peppers until softened, about 3-4 minutes.
  • Add the uncooked rice, chicken broth, BBQ sauce, soy sauce, honey, smoked paprika, garlic powder, and onion powder. Stir well to combine.
  • Bring the mixture to a simmer, then cover the pan and reduce the heat to low. Let it cook for 15-18 minutes, or until the rice is tender and the liquid has been absorbed.
  • Stir the cooked sausage back into the pan, letting it heat through. Fluff the rice with a fork.
  • Garnish with green onions, if desired, and serve warm.
