Ingredients
- 1 lb smoked sausage (sliced)
- 1 cup uncooked white rice
- 1 ½ cups chicken broth
- ½ cup BBQ sauce (your favorite!)
- 1 tbsp soy sauce
- 1 tbsp honey
- ½ tsp smoked paprika
- ½ tsp garlic powder
- ½ tsp onion powder
- 1 cup bell peppers (diced)
- ½ cup onion (diced)
- 1 tbsp olive oil
- Salt & pepper to taste
- Green onions for garnish (optional)
Instructions
- Heat olive oil in a large pan over medium heat. Add the sliced sausage and cook until browned. Remove and set aside.
- In the same pan, sauté the diced onions and bell peppers until softened, about 3-4 minutes.
- Add the uncooked rice, chicken broth, BBQ sauce, soy sauce, honey, smoked paprika, garlic powder, and onion powder. Stir well to combine.
- Bring the mixture to a simmer, then cover the pan and reduce the heat to low. Let it cook for 15-18 minutes, or until the rice is tender and the liquid has been absorbed.
- Stir the cooked sausage back into the pan, letting it heat through. Fluff the rice with a fork.
- Garnish with green onions, if desired, and serve warm.
