Ingredients

  • 2 tablespoons olive oil
  • 1 pound chicken breast, diced
  • 4 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon brown sugar
  • Salt and pepper, to taste
  • 8 ounces pasta (penne or farfalle)
  • 2 cups chicken broth
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach

Instructions

  • Heat 2 tablespoons olive oil in a large skillet over medium heat. Add diced chicken breast, season with salt, pepper, smoked paprika, and brown sugar. Cook for 5-7 minutes until golden brown and fully cooked. Remove chicken and set aside.
  • In the same skillet, sauté minced garlic for about 1 minute until fragrant.
  • Add pasta, chicken broth, and cherry tomatoes to the skillet. Bring to a boil, then reduce the heat to simmer for 10-12 minutes, stirring occasionally, until the pasta is al dente.
  • Stir in the cooked chicken and spinach, cooking for another 2 minutes until the spinach wilts.
  • Serve warm, garnished with grated Parmesan cheese and fresh parsley.

Notes

  • For added spice, you can introduce red pepper flakes or hot sauce.
  • You can use a variety of pasta such as penne, farfalle, or any type of pasta you have on hand.
  • Storage: Keep leftovers in an airtight container for up to 3 days.
