Ingredients

For the Filling:

  • 4 cups fresh or canned peaches, sliced
  • ¾ cup granulated sugar
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • 1 tablespoon lemon juice
  • 2 tablespoons cornstarch (for fresh peaches)

For the Batter:

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • ½ cup unsalted butter, melted
  • ¾ cup milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Pour the melted butter into the bottom of a 9×13-inch baking dish.
  2. In a medium bowl, whisk together the flour, sugar, baking powder, and salt. Add the milk and vanilla extract, stirring until smooth. Pour the batter over the melted butter—do not stir.
  3. In a separate bowl, mix the peaches, sugar, cinnamon, nutmeg, and lemon juice. If using fresh peaches, add cornstarch to thicken the juices.
  4. Spoon the peach mixture evenly over the batter without stirring. The batter will rise over the fruit as it bakes.
  5. Bake for 40-45 minutes until golden brown and bubbling.
