Ingredients
For the Filling:
- 4 cups fresh or canned peaches, sliced
- ¾ cup granulated sugar
- ½ teaspoon cinnamon
- ¼ teaspoon nutmeg
- 1 tablespoon lemon juice
- 2 tablespoons cornstarch (for fresh peaches)
For the Batter:
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 2 teaspoons baking powder
- ¼ teaspoon salt
- ½ cup unsalted butter, melted
- ¾ cup milk
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C). Pour the melted butter into the bottom of a 9×13-inch baking dish.
- In a medium bowl, whisk together the flour, sugar, baking powder, and salt. Add the milk and vanilla extract, stirring until smooth. Pour the batter over the melted butter—do not stir.
- In a separate bowl, mix the peaches, sugar, cinnamon, nutmeg, and lemon juice. If using fresh peaches, add cornstarch to thicken the juices.
- Spoon the peach mixture evenly over the batter without stirring. The batter will rise over the fruit as it bakes.
- Bake for 40-45 minutes until golden brown and bubbling.
