Description

Ingredients

1 cup all-purpose flour

1 tablespoon sugar

1 teaspoon baking powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 cup milk

1 large egg

1 cup corn kernels (fresh or frozen)

2 tablespoons unsalted butter, melted

Oil for frying


Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, salt, and pepper.
  2. In a separate bowl, whisk together the milk and egg until well combined.
  3. Add the wet ingredients to the dry ingredients, stirring until just combined.
  4. Gently fold in the corn kernels and melted butter.
  5. Heat oil in a large skillet over medium heat. Drop spoonfuls of the batter into the hot oil, being careful not to overcrowd the pan.
  6. Cook the fritters for 2-3 minutes per side, or until they are golden brown and crispy.
  7. Remove the fritters from the oil and drain on a paper towel-lined plate.

Notes

To make these fritters healthier, you can try baking them instead of frying. Place spoonfuls of the batter on a baking sheet lined with parchment paper and bake at 400°F for about 15-20 minutes or until golden and crispy.

If making gluten-free, substitute the all-purpose flour with a gluten-free flour blend, ensuring all ingredients, including the baking powder, are gluten-free.

Store leftover fritters in an airtight container in the refrigerator for up to 3 days.

To reheat, place fritters on a baking sheet at 350°F for 5-7 minutes or heat in a skillet over medium heat for a couple of minutes per side to retain crispiness.

Fritters can be frozen by placing cooled fritters in a single layer on a baking sheet to freeze for 2 hours, then transferring to a freezer bag or container for up to 3 months. Reheat at 350°F for 10-15 minutes.
