Description

Ingredients

  • 2 cups uncooked long-grain white rice
  • 1 (10.5-ounce) can cream of mushroom soup
  • 1 (10.5-ounce) can cream of chicken soup
  • 1 ½ cans water (measured with the soup can)
  • 1 ½ pounds boneless, skinless chicken breasts or thighs
  • 1 packet dry onion soup mix
  • Salt and freshly ground black pepper, to taste

Instructions

  • Preheat oven to 350°F (175°C).
  • Lightly grease a 9×13-inch baking dish with non-stick cooking spray.
  • In the dish, mix rice, cream of mushroom soup, cream of chicken soup, and water until well combined.
  • Lay the chicken breasts or thighs on top of the rice mixture. Season with salt and pepper.
  • Sprinkle dry onion soup mix evenly over the chicken and rice.
  • Cover tightly with aluminum foil and bake for 1 hour and 30 minutes—no peeking!
  • Remove from oven, let sit for a few minutes, and serve warm.
