Description

These No Bake Pecan Coconut Praline Cookies combine the sweet, rich taste of buttery pecans, chewy coconut, and a decadent praline syrup – all without turning on the oven! Easy to make and utterly satisfying, they’re perfect for a quick dessert or snack. Ideal for those craving something sweet, crunchy, and irresistibly delicious.

Ingredients

  • 2½ cups sugar
  • ½ cup evaporated milk
  • ½ cup corn syrup
  • ½ cup butter
  • 1 teaspoon vanilla
  • 2 cups chopped pecans
  • 2½ cups grated coconut

Instructions

  1. Set aside the pecans, coconut, and vanilla.
  2. In a large saucepan, mix together the sugar, evaporated milk, corn syrup, and butter.
  3. Bring the mixture to a rolling boil and let it boil for 3 minutes.
  4. Remove the saucepan from heat and stir in the pecans, coconut, and vanilla.
  5. Stir the mixture for about 4 minutes to combine everything evenly.
  6. Take a spoonful of the batter and place it on a piece of wax paper. Let it sit until the batter hardens.
  7. Once the cookies have hardened, remove them from the wax paper and enjoy!

Notes

  • The cookies can be stored at room temperature for up to a week in an airtight container.
  • If you prefer a more indulgent treat, drizzle melted chocolate over the top or experiment with different nuts.
  • The syrup must boil for a full 3 minutes for the cookies to firm up correctly.
