Ingredients
- 2½ cups sugar
- ½ cup evaporated milk
- ½ cup corn syrup
- ½ cup butter
- 1 teaspoon vanilla
- 2–2½ cups chopped pecans
- 2½ cups grated coconut
Instructions
- Set aside the pecans, coconut, and vanilla.
- In a large saucepan, mix together the sugar, evaporated milk, corn syrup, and butter.
- Bring the mixture to a rolling boil and let it boil for 3 minutes.
- Remove the saucepan from heat and stir in the pecans, coconut, and vanilla.
- Stir the mixture for about 4 minutes to combine everything evenly.
- Take a spoonful of the batter and place it on a piece of wax paper. Let it sit until the batter hardens.
- Once the cookies have hardened, remove them from the wax paper and enjoy!
Notes
- The cookies can be stored at room temperature for up to a week in an airtight container.
- If you prefer a more indulgent treat, drizzle melted chocolate over the top or experiment with different nuts.
- The syrup must boil for a full 3 minutes for the cookies to firm up correctly.
