Description

Quick and easy No-Bake Peanut Butter Oatmeal Cookies are a sweet treat made with oats, creamy peanut butter, and a decadent cocoa drizzle. Perfect for when you want a fast, indulgent dessert—no oven required!

Ingredients

  • Cookies:
    • 3 cups quick-cooking oats
    • 1 stick (1/2 cup) unsalted butter
    • 2 cups granulated sugar
    • 1/2 cup milk
    • 1 cup peanut butter
    • 2 teaspoons vanilla extract
  • Cocoa Drizzle:
    • 1 1/2 cups powdered sugar
    • 1/4 cup unsweetened cocoa powder
    • 12 tablespoons milk

Instructions

  • Prepare the Oats: Line your work surface with parchment paper and place the oats in a large mixing bowl.
  • Make the Cookie Base: In a saucepan, melt butter over medium heat. Stir in sugar and milk, then bring to a boil. Once bubbling, let it boil for 1 minute before removing from heat.
  • Combine with Peanut Butter: Stir peanut butter and vanilla into the hot mixture until fully melted and combined. Pour over oats and mix gently.
  • Form Cookies: Drop spoonfuls of the dough onto parchment paper.
  • Prepare Cocoa Drizzle: Mix powdered sugar, cocoa powder, and milk in a bowl until smooth. Transfer to a bag, snip the corner, and drizzle over cookies.
  • Set and Store: Allow cookies to cool and set completely. Store in an airtight container for up to one week.

Notes

  • For a firmer texture, chill cookies in the refrigerator for 10–15 minutes.
  • You can substitute almond butter for peanut butter if desired.
