Nana Dot’s Irish Soda Bread is a traditional, easy-to-make bread with a slightly sweet flavor and a dense, tender crumb. Ingredients
- 2 ½ cups all-purpose flour
- 1 ½ teaspoons baking soda
- 1 tablespoon baking powder
- ½ teaspoon salt
- 3 tablespoons white sugar
- ½ cup butter, cut into pieces
- 1 cup raisins
- ½ cup currants
- 2 teaspoons caraway seeds (optional)
- ¾ cup milk
- 3 tablespoons apple cider vinegar
Instructions
- Preheat oven to 400°F (200°C). Grease two baking sheets.
- In a large bowl, mix flour, baking soda, baking powder, salt, and sugar.
- Cut in butter until the mixture resembles coarse cornmeal.
- Stir in raisins, currants, and caraway seeds.
- In a separate bowl, combine milk and apple cider vinegar. Pour into dry ingredients and stir until just combined.
- Turn dough out onto a floured surface and knead gently 8–10 times.
- Divide dough into two equal portions and place on prepared baking sheets.
- Bake for 15 minutes. Reduce heat to 375°F (190°C) and continue baking for another 15 minutes, until golden brown.
Notes
- You can substitute whole wheat flour for all-purpose flour, but expect a denser texture.
- For a sweeter bread, increase sugar to 4 tablespoons.
- Add nuts or dried cranberries for extra flavor.
- If you don’t have buttermilk, make your own by adding 1 tablespoon of vinegar or lemon juice to regular milk and letting it sit for 5 minutes.
