Ingredients

  • 2 ½ cups all-purpose flour
  • 1 ½ teaspoons baking soda
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 3 tablespoons white sugar
  • ½ cup butter, cut into pieces
  • 1 cup raisins
  • ½ cup currants
  • 2 teaspoons caraway seeds (optional)
  • ¾ cup milk
  • 3 tablespoons apple cider vinegar

Instructions

  • Preheat oven to 400°F (200°C). Grease two baking sheets.
  • In a large bowl, mix flour, baking soda, baking powder, salt, and sugar.
  • Cut in butter until the mixture resembles coarse cornmeal.
  • Stir in raisins, currants, and caraway seeds.
  • In a separate bowl, combine milk and apple cider vinegar. Pour into dry ingredients and stir until just combined.
  • Turn dough out onto a floured surface and knead gently 8–10 times.
  • Divide dough into two equal portions and place on prepared baking sheets.
  • Bake for 15 minutes. Reduce heat to 375°F (190°C) and continue baking for another 15 minutes, until golden brown.

Notes

  • You can substitute whole wheat flour for all-purpose flour, but expect a denser texture.
  • For a sweeter bread, increase sugar to 4 tablespoons.
  • Add nuts or dried cranberries for extra flavor.
  • If you don’t have buttermilk, make your own by adding 1 tablespoon of vinegar or lemon juice to regular milk and letting it sit for 5 minutes.
