Ingredients
- 1/2 cup butter, softened
- 1/2 cup peanut butter
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1 large egg
- 1/2 teaspoon vanilla extract
- 1 1/4 cups sifted all-purpose flour
- 3/4 teaspoon baking soda
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
- In a large mixing bowl, combine the butter, peanut butter, granulated sugar, brown sugar, egg, and vanilla extract. Mix until smooth and creamy.
- Sift together the flour, baking soda, and salt, then add to the wet ingredients. Mix until the dough comes together and is smooth.
- Roll the dough into 1-inch balls and place them about 2 inches apart on the prepared baking sheet.
- Using a fork, dip it in sugar or flour, and gently press the dough balls to flatten them and create a crisscross pattern.
- Bake in the preheated oven for 12-15 minutes or until the edges are lightly browned.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- For extra flavor, try adding chocolate chips or chopped peanuts to the dough before baking.
- Store cooled cookies in an airtight container at room temperature for up to 5 days.
- To make these cookies extra soft, slightly underbake them, leaving them a bit soft in the center.
