Ingredients
- 8 slices sourdough bread
- 1 lb mushrooms, sliced
- 2 large onions, thinly sliced
- 8 slices Gouda cheese
- Olive oil or butter (for cooking)

- Butter (for grilling sandwiches)
Instructions
- Caramelize the Onions:
- Heat a skillet over medium heat with a tablespoon of olive oil or butter.
- Add sliced onions and cook, stirring occasionally, until caramelized (about 20-25 minutes). Remove and set aside.
- Sauté the Mushrooms:
- In the same skillet, add more oil or butter and sauté the sliced mushrooms.
- Cook until tender and browned, about 10 minutes. Season with salt and pepper to taste.
- Assemble the Sandwiches:
- Lay out the sourdough bread slices.
- On four slices, place one slice of Gouda cheese.
- Top with an even layer of mushrooms and caramelized onions.
- Add another slice of Gouda cheese and top with the remaining bread slices.
- Grill the Sandwiches:
- Heat a skillet or griddle over medium heat.
- Butter the outside of each sandwich and place them in the skillet.
- Grill for 3-4 minutes per side, pressing gently, until the bread is golden brown and the cheese is melted.
- Serve:
- Slice sandwiches in half and serve immediately for the best gooey texture.
