Ingredients

  • 8 slices sourdough bread
  • 1 lb mushrooms, sliced
  • 2 large onions, thinly sliced
  • 8 slices Gouda cheese
  • Olive oil or butter (for cooking)
  • Salt and pepper (to taste)
  • Butter (for grilling sandwiches)

Instructions

  • Caramelize the Onions:
    • Heat a skillet over medium heat with a tablespoon of olive oil or butter.
    • Add sliced onions and cook, stirring occasionally, until caramelized (about 20-25 minutes). Remove and set aside.
  • Sauté the Mushrooms:
    • In the same skillet, add more oil or butter and sauté the sliced mushrooms.
    • Cook until tender and browned, about 10 minutes. Season with salt and pepper to taste.
  • Assemble the Sandwiches:
    • Lay out the sourdough bread slices.
    • On four slices, place one slice of Gouda cheese.
    • Top with an even layer of mushrooms and caramelized onions.
    • Add another slice of Gouda cheese and top with the remaining bread slices.
  • Grill the Sandwiches:
    • Heat a skillet or griddle over medium heat.
    • Butter the outside of each sandwich and place them in the skillet.
    • Grill for 3-4 minutes per side, pressing gently, until the bread is golden brown and the cheese is melted.
  • Serve:
    • Slice sandwiches in half and serve immediately for the best gooey texture.
