Ingredients

For the Mashed Potatoes:

  • 2 lbs potatoes, peeled and cubed
  • 1/2 cup milk
  • 1/4 cup butter
  • Salt and pepper, to taste

For the Gravy:

  • 2 cups beef broth
  • 2 tbsp flour
  • 2 tbsp butter

Instructions

  • Make the Meatloaf:
    • Preheat oven to 350°F (175°C).
    • Mix ground beef, breadcrumbs, milk, egg, onion, ketchup, salt, and pepper in a bowl.
    • Shape into a loaf and place in a baking dish.
    • Bake for 45-50 minutes or until fully cooked.
  • Prepare the Mashed Potatoes:
    • Boil potatoes in a large pot of water until tender (15-20 minutes).
    • Drain and mash with milk, butter, salt, and pepper to desired consistency.
  • Make the Gravy:
    • Melt butter in a saucepan over medium heat. Stir in flour and cook for 1-2 minutes.
    • Gradually whisk in beef broth, stirring until thickened.
  • Serve:
    • Slice the meatloaf and plate with mashed potatoes. Top with warm gravy and enjoy.
