Ingredients

For the Meatloaf:

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 egg
  • 1 small onion, finely chopped
  • 1/4 cup ketchup
  • Salt and pepper, to taste

For the Mashed Potatoes:

  • 2 lbs potatoes, peeled and cubed
  • 1/2 cup milk
  • 1/4 cup butter
  • Salt and pepper, to taste

For the Gravy:

  • 2 cups beef broth
  • 2 tbsp flour
  • 2 tbsp butter

Instructions

1. Make the Meatloaf:

  • Preheat oven to 350°F (175°C).
  • In a mixing bowl, combine ground beef, breadcrumbs, milk, egg, chopped onion, ketchup, salt, and pepper.
  • Shape the mixture into a loaf and place it in a baking dish.
  • Bake for 45-50 minutes or until the internal temperature reaches 160°F (71°C).

2. Prepare Mashed Potatoes:

  • In a large pot, boil peeled and cubed potatoes until tender (about 15-20 minutes).
  • Drain and mash the potatoes with milk, butter, salt, and pepper until smooth and creamy.

3. Make the Gravy:

  • In a saucepan, melt butter over medium heat.
  • Stir in the flour and cook for 1-2 minutes, stirring constantly.
  • Gradually whisk in beef broth and let it simmer until thickened.

4. Serve:

  • Slice the meatloaf and serve with mashed potatoes.
  • Top with warm gravy and enjoy!

Notes

  • For extra flavor: Add Worcestershire sauce, garlic powder, or Italian seasoning to the meatloaf mixture.
  • For ultra-creamy mashed potatoes: Use Yukon Gold or Russet potatoes and add a splash of heavy cream.
  • For a thicker gravy: Simmer longer or mix a little extra flour with water before adding it to the gravy.
