Description

A comforting and hearty Meat & Potato Casserole recipe featuring tender potatoes, seasoned ground meat, a creamy mushroom sauce, and melted cheese. Perfect for family dinners or meal prep, this dish is customizable and easy to prepare.

Ingredients

  • 1 lb. lean ground beef or venison
  • 1 onion, chopped
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp rosemary (optional)
  • Salt and pepper to taste
  • 3 cups thinly sliced potatoes (about 5 potatoes)
  • 1 1/2 cups cream of mushroom soup (or 1 can)
  • 1/2 cup stock (beef, chicken, or vegetable)
  • 1/4 cup milk or cream
  • 1 1/2 cups shredded cheese

Instructions

  • Preheat oven to 350°F and grease an 11×7 inch baking dish.
  • In a frying pan, cook onions and ground meat until browned. Add seasonings, salt, and pepper. Drain excess grease.
  • Whisk together cream of mushroom soup, stock, milk, salt, and pepper in a bowl.
  • Layer half the potatoes in the baking dish. Add half the soup mixture, cooked meat, and cheese. Repeat layers.
  • Cover with greased aluminum foil (greased side down).
  • Bake for 1 to 1 1/2 hours or until potatoes are tender. Remove foil in the last 10 minutes for a golden topping.

Notes

  • Sweet potatoes can be substituted for a sweeter flavor.
  • For extra vegetables, layer spinach, zucchini, or mushrooms.
  • To make gluten-free, use a gluten-free cream of mushroom soup.
  • Spice it up with diced jalapeños or hot sauce.
