Ingredients
- 1/3 cup mayonnaise
- 1 egg
- 2 teaspoons Dijon mustard
- 1/2 teaspoon hot sauce
- 1 teaspoon lemon juice
- 1/2 teaspoon Old Bay seasoning
- 2 tablespoons green onions, sliced
- 1 pound lump crab meat
- 1 cup saltine crackers, crushed
- Lemon wedges and remoulade sauce for serving (optional)

Instructions
- In a medium bowl, whisk together the mayonnaise, egg, Dijon mustard, hot sauce, lemon juice, and Old Bay seasoning.
- Stir in the sliced green onions.
- Gently fold in the crab meat and cracker crumbs, careful not to break the crab into small pieces.
- Cover and refrigerate the mixture for at least 1 hour to firm it up.
- Preheat the oven to 450°F (230°C) and coat a sheet pan with cooking spray.
- Form the crab mixture into 8 equal-sized patties, about 1/3 cup each, and place them on the prepared sheet pan.
- Bake for 8-10 minutes or until the crab cakes are golden brown and cooked through.
- Serve immediately with lemon wedges and remoulade sauce, if desired.
