Ingredients
- 4 cups powdered sugar
- 1 can (14 oz) sweetened condensed milk
- ½ cup unsalted butter, softened
- 2 cups shredded sweetened coconut
- 2 cups chopped pecans
- 2 cups semisweet or milk chocolate chips
- 2 tbsp coconut oil or shortening (for smoother chocolate coating)
Instructions
Prepare the Filling:
- In a large bowl, mix powdered sugar, sweetened condensed milk, and softened butter until smooth.
- Stir in shredded coconut and chopped pecans until well incorporated.
- Scoop tablespoon-sized portions and roll into balls. Place on a parchment-lined baking sheet.
- Refrigerate for at least 1-2 hours until firm.
Melt the Chocolate:
- In a microwave-safe bowl, melt chocolate chips and coconut oil in 30-second intervals, stirring between each, until smooth.
Coat the Candies:
- Using a fork or toothpick, dip each chilled candy ball into the melted chocolate, allowing excess to drip off.
- Place coated candies back on the parchment-lined baking sheet.
Set the Chocolate:
- Refrigerate for 15-20 minutes until the chocolate is completely set.
