Ingredients
- 3–4 salmon fillets, skin removed
- 2 tablespoons olive oil
- 1 teaspoon dried basil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon dried thyme
- ¾ teaspoon red pepper flakes
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 5 cloves garlic, minced
- ⅓ cup sun-dried tomatoes, chopped
- 1 cup unsalted chicken stock
- ½ cup heavy cream
- ½ cup freshly grated Parmesan cheese
- Fresh basil, for garnish
Instructions
- Prepare the Spice Blend: Mix dried basil, garlic powder, onion powder, dried thyme, red pepper flakes, salt, and black pepper in a small bowl.
- Season the Salmon: Coat both sides of the salmon fillets with half of the spice blend.
- Sear the Salmon: Heat olive oil in a skillet over medium-high heat. Sear the salmon, flesh side down, for 5 minutes per side until golden brown. Remove and set aside.
- Sauté Aromatics: Sauté minced garlic and chopped sun-dried tomatoes in the same skillet for 1–2 minutes over low heat.
- Deglaze the Pan: Pour in the chicken stock, scraping up browned bits.
- Make the Sauce: Add heavy cream, Parmesan cheese, and the remaining spice blend. Stir well and simmer over medium-low heat for 10–15 minutes until thickened. Adjust seasoning as needed.
- Combine: Return the salmon to the skillet, spooning sauce over the fillets. Cook for 3–5 minutes to your desired doneness.
- Serve: Garnish with fresh basil and serve hot with your choice of sides.
