Ingredients
- 4 salmon fillets, skinless
- 1 tablespoon olive oil
- 2 teaspoons dried Italian seasoning
- ½ teaspoon kosher salt
- ¼ teaspoon cracked black pepper
- 3 tablespoons butter
- 2 cloves garlic, minced
- 3 tablespoons all-purpose flour
- 1½ cups chicken broth
- ¾ cup heavy cream
- ½ cup grated Parmesan cheese
- ½ cup sun-dried tomatoes, drained and chopped
- 1 teaspoon dried Italian seasoning
- 1 teaspoon lemon zest
- Fresh basil, chopped, for garnish
Instructions
- Season the Salmon: Brush olive oil on both sides of the salmon fillets. Season with dried Italian seasoning, salt, and pepper.
- Cook the Salmon: In a large skillet over medium-high heat, cook the salmon fillets for about 3 minutes on each side until golden brown. Remove from the skillet and set aside.
- Prepare the Sauce: In the same skillet, melt butter. Add garlic and sauté for 30 seconds. Stir in flour to make a roux.
- Add Liquids: Gradually whisk in chicken broth and heavy cream. Bring to a simmer.
- Incorporate Cheese and Tomatoes: Add Parmesan cheese, sun-dried tomatoes, Italian seasoning, and lemon zest. Stir until the cheese is melted and the sauce is well combined.
- Combine Salmon and Sauce: Return the salmon to the skillet, spooning the sauce over it. Simmer for 2-3 minutes to blend the flavors.
- Garnish and Serve: Top with fresh basil before serving.
Notes
- For a spicier flavor, add red pepper flakes to the sauce.
- You can swap out Parmesan for Pecorino Romano for a sharper taste.
- To make the sauce thicker, simmer longer or add a cornstarch slurry.
- For a gluten-free version, substitute the flour with a gluten-free flour blend or cornstarch.
