Ingredients
- 2 boneless, skinless chicken breasts (or thighs for a richer flavor)
- ¼ cup sun-dried tomatoes, chopped
- 1 tsp paprika
- ½ tsp chili flakes (adjust to taste)
- 1 tsp dried oregano
- 2 cups chicken stock (or vegetable stock)
- ½ cup single cream (or plant-based cream)
- 2 packs ramen noodles
- ¼ cup grated parmesan cheese
- 2 tbsp all-purpose flour (for coating the chicken)
- 1 tbsp olive oil
- Salt and pepper to taste
- 1 tsp sugar (optional, for balancing flavors)
Toppings:
- Fresh coriander
- Beansprouts
- Spring onions, sliced
- Edamame beans
- Grated parmesan (extra for garnish)
- Chili oil (optional)
Instructions
- Prepare the Chicken: Coat the chicken breasts with all-purpose flour. Heat olive oil in a saucepan over medium heat and sear the chicken for 4 minutes on each side until golden brown. Remove and set aside.
- Make the Broth: In the same pan, sauté garlic, sun-dried tomatoes, paprika, chili flakes, and oregano for about a minute. Pour in the chicken stock and cream, then mix in the grated parmesan.
- Cook the Chicken: Return the chicken to the pan, cover, and let it cook for another 5 minutes. Once cooked, slice the chicken and set aside.
- Prepare the Ramen: Season the broth with salt, pepper, and sugar if needed. Adjust the consistency by adding more stock if necessary. Bring to a simmer and add the ramen noodles, cooking them according to package instructions.
- Assemble and Serve: Divide the ramen into bowls, place the sliced chicken on top, and garnish with fresh coriander, beansprouts, spring onions, edamame beans, and a drizzle of chili oil if desired. Enjoy!
Notes
- Vegan Option: Substitute chicken with tofu or plant-based chicken and use dairy-free cream.
- Make it Spicy: Add extra chili flakes or a splash of chili oil.
- Storage: Store leftovers in an airtight container for 2-3 days. Reheat gently with extra stock to loosen the broth.
- Best Noodles: Ramen works best, but other Asian noodles like udon or rice noodles can be used.
