Description

This marinated and roasted Brussels sprouts recipe turns this humble vegetable into a flavorful side dish or snack. The overnight marinade infuses the sprouts with a tangy and spiced blend, while roasting creates a golden-brown, crispy texture. Perfect for healthy meals, meal prep, or even as a standalone treat!

Ingredients

  • 1 lb Brussels sprouts (halved or quartered)
  • Juice of 1 lemon
  • 1 tbsp olive oil
  • ½ tsp black pepper
  • ½ tsp paprika
  • ½ tsp garlic salt

Instructions

  1. Prepare the Marinade: Combine lemon juice, olive oil, pepper, paprika, and garlic salt in a gallon-size zip-top bag.
  2. Marinate the Brussels Sprouts: Add halved Brussels sprouts, seal the bag, and toss to coat evenly. Refrigerate overnight (or at least 2 hours for quicker prep).
  3. Preheat the Oven: Set the oven to 400°F (200°C).
  4. Roast the Brussels Sprouts: Spread marinated sprouts on a baking sheet in a single layer. Roast for 15-20 minutes, flipping halfway through, until golden and slightly crispy.
  5. Serve and Enjoy: Serve warm as a side dish or a healthy snack.

Notes

  • For extra crispiness, avoid overcrowding the baking sheet.
  • Adjust seasonings to taste, adding cayenne for heat or a drizzle of honey for sweetness.
  • Leftovers can be refrigerated in an airtight container for up to 3 days.
