Ingredients

For the salmon:

  • 1 pound salmon fillet

For the mango salsa:

  • 1 mango, diced
  • 1/2 cup red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • 1 tablespoon lime juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

For the cilantro lime rice:

  • 1 cup brown rice
  • 2 cups vegetable broth
  • 1/4 teaspoon salt
  • 1 tablespoon chopped cilantro
  • 1/4 teaspoon lime zest

Instructions

  1. Cook the rice:
    • In a large pot, bring the vegetable broth to a boil.
    • Add rice and salt, reduce heat, cover, and simmer for 15–20 minutes, or until tender.
    • Stir in cilantro and lime zest.
  2. Prepare the salmon:
    • Season the salmon fillet with salt and pepper.
    • Heat olive oil in a grill pan or skillet over medium heat.
    • Cook the salmon for 4–5 minutes per side, or until it flakes easily with a fork.
  3. Make the mango salsa:
    • In a mixing bowl, combine diced mango, red onion, cilantro, lime juice, salt, and pepper. Toss well.
  4. Assemble the dish:
    • Plate the cilantro lime rice, top with cooked salmon, and spoon mango salsa over the salmon.
  5. Serve:
