Ingredients

  • 2 tbsp freshly squeezed lemon juice
  • 1 cup white chocolate chips
  • 1/4 cup heavy cream
  • 2 tbsp unsalted butter
  • Zest from 2 lemons
  • 2 cups powdered sugar
  • Yellow food coloring (optional)

Instructions:

  1. Combine the white chocolate chips and butter in a heatproof bowl.
  2. Heat the heavy cream until it’s simmering, then pour it over the chocolate and butter mixture. Stir until smooth and melted.
  3. Add the freshly squeezed lemon juice and lemon zest, mixing well.
  4. Gradually add powdered sugar to the mixture, stirring until smooth. If desired, mix in a few drops of yellow food coloring for a vibrant look.
  5. Chill the mixture in the refrigerator for at least 2 hours, until firm enough to shape into balls.
  6. Once chilled, scoop the mixture and shape it into small truffles, about 1 inch in diameter.
  7. Roll each truffle in powdered sugar and refrigerate for 30 minutes before serving.
