Description

Lemon Meringue Pie Bites are zesty, bite-sized desserts featuring a tangy lemon filling, buttery graham cracker crust, and fluffy meringue topping. Perfect for parties, these mini treats are easy to make and irresistibly delicious.

 


Ingredients

For the Crust:

  • Graham cracker crumbs
  • Sugar
  • Melted butter

For the Filling:

  • Egg yolks
  • Sweetened condensed milk
  • Fresh lemon juice
  • Lemon zest

For the Meringue:

  • Egg whites
  • Sugar
  • Cream of tartar

Instructions

  • Preheat oven to 350°F (175°C) and line a mini muffin tin with paper liners.
  • Mix graham cracker crumbs, sugar, and melted butter. Press into each muffin cup to form crusts.
  • In a bowl, whisk egg yolks, sweetened condensed milk, lemon juice, and zest until smooth. Spoon filling onto the crusts.
  • Bake for 10-12 minutes until the filling sets. Cool completely.
  • Beat egg whites with cream of tartar until frothy, then gradually add sugar and beat to stiff peaks.
  • Spoon meringue onto each bite and brown with a kitchen torch. Chill for 1 hour before serving.

Notes

  • For a gluten-free version, use gluten-free graham crackers.
  • Add coconut flakes or a drizzle of chocolate for extra decoration.
  • Store in the fridge for up to 3 days or freeze (without meringue) for up to 1 month.
