Ingredients
For the Crust:
- Graham cracker crumbs
- Sugar
- Melted butter
For the Filling:
- Egg yolks
- Sweetened condensed milk
- Fresh lemon juice
- Lemon zest
For the Meringue:
- Egg whites
- Sugar
- Cream of tartar
Instructions
- Preheat oven to 350°F (175°C) and line a mini muffin tin with paper liners.
- Mix graham cracker crumbs, sugar, and melted butter. Press into each muffin cup to form crusts.
- In a bowl, whisk egg yolks, sweetened condensed milk, lemon juice, and zest until smooth. Spoon filling onto the crusts.
- Bake for 10-12 minutes until the filling sets. Cool completely.
- Beat egg whites with cream of tartar until frothy, then gradually add sugar and beat to stiff peaks.
- Spoon meringue onto each bite and brown with a kitchen torch. Chill for 1 hour before serving.
