Ingredients

  • For the Soup:
    • 2 tbsp olive oil
    • 2 boneless, skinless chicken breasts
    • 1 tsp lemon pepper seasoning
    • ½ cup dry white wine (or extra chicken broth)
    • 2 tbsp butter
    • 1 yellow onion, diced
    • 2 carrots, diced
    • 2 celery stalks, diced
    • 4 garlic cloves, minced
    • 8 cups chicken broth
    • 1 chicken bouillon cube
    • 1 tbsp soy sauce
    • ⅓ cup fresh lemon juice
    • ½ cup Parmesan cheese, grated
    • 1 Parmesan cheese rind (optional)
    • 6 oz angel hair pasta
  • For the Seasonings:
    • 1 tsp dried parsley
    • 1 tsp dried basil
    • ½ tsp dried oregano
    • ¼ tsp mustard powder
    • Pinch of turmeric
    • Salt and pepper to taste

Instructions

  1. Prepare the Chicken:
    • Heat olive oil in a large pot over medium-high heat.
    • Season chicken with lemon pepper seasoning.
    • Sear chicken for 5-7 minutes on each side until golden. Remove and set aside.
  2. Sauté the Vegetables:
    • In the same pot, melt butter.
    • Add onion, carrots, celery, and garlic. Sauté for 5-7 minutes until softened.
  3. Deglaze the Pot:
    • Pour in white wine (or broth), scraping up browned bits. Simmer for 2 minutes.
  4. Add Broth and Chicken:
    • Return chicken to the pot. Add chicken broth, bouillon cube, soy sauce, lemon juice, Parmesan cheese, and rind. Stir.
  5. Add Seasonings:
    • Mix in parsley, basil, oregano, mustard powder, turmeric, salt, and pepper. Bring to a gentle boil.
  6. Cook the Pasta:
    • Add angel hair pasta to the pot. Cook until al dente (3-4 minutes).
  7. Shred the Chicken:
    • Remove chicken, shred with two forks, and return to the pot.
  8. Adjust Seasoning:
    • Taste and adjust seasoning with additional salt, pepper, or lemon juice as needed.
  9. Serve:
    • Ladle soup into bowls and garnish with extra Parmesan, if desired.

Notes

  • For a thicker consistency, add a cornstarch slurry.
  • Cook pasta separately to prevent it from becoming mushy during storage.
  • Rotisserie chicken can be substituted for convenience.
