Ingredients

1 cup all-purpose flour

1/2 cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1/4 cup freshly squeezed lemon juice

Zest of 1 lemon

1/2 teaspoon vanilla extract

For the glaze:

1/2 cup powdered sugar

1 tablespoon freshly squeezed lemon juice

1 teaspoon lemon zest


Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking pan.
  2. In a small bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large bowl, cream together the softened butter and sugar until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition. Stir in the lemon juice, lemon zest, and vanilla extract.
  5. Gradually fold the dry ingredients into the wet mixture until fully combined.
  6. Pour the batter into the prepared baking pan and spread evenly.
