Ingredients
- 1 pound ground beef
- 1 pound ground chicken
- 1/2 cup finely diced onion
- 1 cup crushed low-carb binder (e.g., ground crispy chicken skins or almond flour)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 2 large eggs
- 1/4 cup low-carb ketchup
Instructions
- Preheat Oven – Set oven to 350°F (175°C).
- Mix Ingredients – In a large bowl, combine ground beef, ground chicken, diced onion, low-carb binder, salt, black pepper, Italian seasoning, garlic powder, onion powder, and eggs. Mix well.
- Portion the Mixture – Grease a muffin tin and evenly divide the meat mixture into each cup.
- Top with Ketchup – Spread 1/2 tablespoon of low-carb ketchup on each portion.
- Bake – Bake for 15 minutes or until internal temperature reaches 160°F (71°C).
