Ingredients

  • 1 pound ground beef
  • 1 pound ground chicken
  • 1/2 cup finely diced onion
  • 1 cup crushed low-carb binder (e.g., ground crispy chicken skins or almond flour)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 2 large eggs
  • 1/4 cup low-carb ketchup

Instructions

  1. Preheat Oven – Set oven to 350°F (175°C).
  2. Mix Ingredients – In a large bowl, combine ground beef, ground chicken, diced onion, low-carb binder, salt, black pepper, Italian seasoning, garlic powder, onion powder, and eggs. Mix well.
  3. Portion the Mixture – Grease a muffin tin and evenly divide the meat mixture into each cup.
  4. Top with Ketchup – Spread 1/2 tablespoon of low-carb ketchup on each portion.
  5. Bake – Bake for 15 minutes or until internal temperature reaches 160°F (71°C).
