Ingredients

  • 4 slices Italian bread, thickly sliced
  • 2 tablespoons pesto
  • 1 cooked chicken breast, sliced in half lengthwise
  • 2 tablespoons red onion, thinly sliced
  • 1/4 cup roasted red peppers, thinly sliced and drained
  • 4 ounces low-moisture, part-skim mozzarella cheese

Instructions

  • Prepare the Bread: Spread pesto evenly on one side of each bread slice.
  • Assemble the Sandwich:
    • Place one slice of bread (pesto side up) on a surface.
    • Layer with half the chicken breast, red onion, roasted red peppers, and mozzarella.
    • Top with another slice of bread (pesto side down). Repeat for the second sandwich.
  • Preheat the Press: Heat a panini press and lightly coat with cooking spray.
  • Grill the Panini: Place the sandwiches in the press and grill for 3-4 minutes until the bread is golden brown and the cheese is melted.
