Ingredients
- 3 ½ cups all-purpose flour
- ¼ cup sugar
- 5 teaspoons baking powder
- ⅛ teaspoon salt
- ½ cup salted butter, cold and cubed
- ⅔ cup milk (2% preferred)
- ⅓ cup heavy cream
- 1 large egg
- 2 tablespoons milk or cream (for brushing tops before baking)
Instructions
- Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a bowl, mix together the dry ingredients: flour, sugar, baking powder, and salt.
- Add the cold cubed butter and work it into the flour using your hands or a pastry cutter until the mixture resembles coarse crumbs.
- In a separate bowl, whisk together the milk, cream, and egg. Gradually add the wet mixture to the dry ingredients, stirring gently until the dough forms a ball.
- Turn the dough out onto a lightly floured surface. Knead it gently and pat it into a 1-inch thick round.
- Cut the dough into rounds using a cutter or glass. Re-roll any scraps and repeat until all the dough is used.
- Arrange the scones on the prepared baking sheet, brushing the tops with milk or cream.
- Bake for about 25 minutes or until the scones are golden and puffed up.
- Let the scones cool slightly on a wire rack before serving.
Notes
- Variations: Add raisins or currants to the dough for a traditional touch. For extra indulgence, serve with whipped cream or a variety of jams.
- Storage: Store leftover scones in an airtight container or plastic bag for up to 3 months. To reheat, thaw in the refrigerator overnight and warm in the oven.
