Ingredients
- 4 medium potatoes, peeled and cubed
- 1/2 cup shredded cheddar cheese
- 1/4 cup sour cream
- 2 tablespoons unsalted butter
- 2 tablespoons chives, chopped
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 2 cups breadcrumbs (preferably panko)
- Vegetable oil for frying
Instructions
- Boil the potatoes in salted water until tender (10-15 minutes). Drain and return to the pot.
- Mash the potatoes until smooth. Stir in the cheddar cheese, sour cream, butter, chives, garlic powder, salt, and pepper until combined.
- Let the mixture cool for 10 minutes, then form into small balls.
- Set up a breading station: flour, beaten eggs, and breadcrumbs.
- Coat each ball in flour, dip in eggs, and roll in breadcrumbs.
- Heat oil in a skillet over medium heat. Fry the potato balls in batches for 3-4 minutes until golden and crispy.
- Place on paper towels to drain. Serve hot with your favorite dipping sauce.
