Description

Ingredients

  • 4 medium potatoes, peeled and cubed
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup sour cream
  • 2 tablespoons unsalted butter
  • 2 tablespoons chives, chopped
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 2 cups breadcrumbs (preferably panko)
  • Vegetable oil for frying

Instructions

  1. Boil the potatoes in salted water until tender (10-15 minutes). Drain and return to the pot.
  2. Mash the potatoes until smooth. Stir in the cheddar cheese, sour cream, butter, chives, garlic powder, salt, and pepper until combined.
  3. Let the mixture cool for 10 minutes, then form into small balls.
  4. Set up a breading station: flour, beaten eggs, and breadcrumbs.
  5. Coat each ball in flour, dip in eggs, and roll in breadcrumbs.
  6. Heat oil in a skillet over medium heat. Fry the potato balls in batches for 3-4 minutes until golden and crispy.
  7. Place on paper towels to drain. Serve hot with your favorite dipping sauce.
