Description

This Irish-inspired Champ is a comforting twist on classic mashed potatoes, infused with the savory flavors of green onions and rich butter. It’s creamy, flavorful, and pairs perfectly with a wide variety of main dishes, especially savory gravies.


Ingredients

  • 6 medium potatoes
  • 50ml whole milk
  • 68 green onions (green parts only)
  • 100g unsalted butter
  • Salt and pepper to taste

Instructions

  1. Infuse the milk: Add sliced green onions to the milk and bring to a boil on low heat. Once boiling, remove from heat and let the onions infuse in the milk for a few minutes.

  2. Prepare the potatoes: Peel and quarter the potatoes. Boil them in salted water until very tender, about 10-12 minutes. Drain and let them steam dry for 2-3 minutes to remove excess moisture.

  3. Mash and combine: Pour the hot milk with infused onions over the potatoes. Mash well using a potato masher or ricer until smooth. Stir in the butter, and season with salt and white pepper to taste.
