Ingredients

  • 1 (5 1/2-pound) corned beef brisket
  • 2 large onions
  • 10 carrots, cut into 1-inch pieces
  • 2 heads cabbage, cored and cut into wedges
  • 15 small white potatoes

Instructions

  • Rinse the corned beef under cold water and place it in a large pot.
  • Add enough water to cover the meat by 6 inches.
  • Add onions and bring to a boil. Cook for 30 minutes.
  • Reduce heat to medium-low, cover, and cook for 3 1/2 hours.
  • Add carrots, cabbage, and potatoes to the pot and cook for an additional 30 minutes.
  • Serve the corned beef and vegetables with some of the flavorful broth.
