Ingredients
- 1 (5 1/2-pound) corned beef brisket
- 2 large onions
- 10 carrots, cut into 1-inch pieces
- 2 heads cabbage, cored and cut into wedges
- 15 small white potatoes
Instructions
- Rinse the corned beef under cold water and place it in a large pot.
- Add enough water to cover the meat by 6 inches.
- Add onions and bring to a boil. Cook for 30 minutes.
- Reduce heat to medium-low, cover, and cook for 3 1/2 hours.
- Add carrots, cabbage, and potatoes to the pot and cook for an additional 30 minutes.
- Serve the corned beef and vegetables with some of the flavorful broth.
