Ingredients

  • 24 oz salmon fillets (about 34 fillets)
  • 4 cloves garlic, minced
  • Salt, to taste
  • 2 tbsp butter
  • 3 tbsp low-sodium soy sauce or tamari sauce
  • 3 tbsp honey
  • 1 tbsp freshly squeezed lime juice (or lemon juice)
  • ¼ cup fig spread (preferably Divina brand)
  • Red pepper flakes, to taste

Instructions

Prepare the Salmon

  1. Preheat oven to 375°F (190°C).
  2. Pat salmon fillets dry and grease a baking dish with butter.
  3. Place salmon skin-side down, sprinkle with garlic and salt, and top with thin slices of butter.

Bake

  1. Bake for 10-12 minutes, until the salmon flakes easily with a fork.

Prepare the Glaze

  1. While salmon bakes, mix soy sauce, honey, lime juice, fig spread, and red pepper flakes in a bowl until smooth.

Glaze the Salmon

  1. Remove salmon from oven and spoon glaze over each fillet.
  2. Return to oven for 2-5 minutes to caramelize the glaze.

Serve

  1. Transfer to plates and drizzle with remaining glaze.
