These Honey Garlic Chicken Bites are the perfect balance of sweet, savory, and spicy, making for an easy, flavorful meal. Ready in just 30 minutes, this quick recipe is ideal for busy weeknights or meal prep. The tender chicken, coated in a honey-garlic sauce, pairs beautifully with rice, pasta, or zucchini noodles for a delightful dish everyone will love.

Ingredients

  • 1lb (450g) boneless skinless chicken breast, cut into 1-inch cubes
  • 2 teaspoons cornstarch (optional)
  • Kosher salt and freshly ground black pepper, to taste
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 4 cloves garlic, finely minced
  • 1/4 cup honey
  • 3 tablespoons low-sodium chicken stock
  • 1 or 2 tablespoons lemon juice
  • 1 teaspoon hot sauce (optional)
  • 1 teaspoon red chili pepper flakes, for garnish
  • 1 tablespoon chopped fresh parsley, for garnish

Instructions

  • Toss the chicken cubes with cornstarch, salt, and pepper in a large bowl.
  • Heat olive oil in a large skillet over medium-high heat, then add butter and let it melt.
  • Cook chicken cubes, stirring occasionally, until golden brown (about 6-8 minutes). You may need to cook in batches to avoid overcrowding.
  • Add garlic, honey, chicken stock, lemon juice, and hot sauce (if using) to the skillet. Stir to coat the chicken. Simmer for 2-3 minutes until the sauce thickens.
  • Garnish with red chili flakes and parsley. Serve over rice or another side of your choice.

Notes

  • Storage: Store leftovers in an airtight container for up to 3 days.
  • Reheating: Reheat on the stovetop or microwave, adding a splash of water or chicken stock.
  • Spicy Variation: Increase hot sauce or chili flakes for extra heat.
  • Vegetarian Option: Substitute chicken with tofu or tempeh.
