Ingredients
1 cup all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1/4 cup sugar
1/2 cup milk
1/4 cup unsalted butter, melted
1 teaspoon vanilla extract
1 cup pecans, chopped
1/2 cup light corn syrup
1/2 cup brown sugar
2 large eggs
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C).
- In a medium mixing bowl, whisk together the flour, baking powder, salt, and sugar.
- Add the milk, melted butter, and 1 teaspoon of vanilla extract to the dry ingredients and stir until just combined. Set aside.
- In a separate large bowl, mix the chopped pecans, corn syrup, brown sugar, eggs, cinnamon, nutmeg, and the remaining 1/2 teaspoon of vanilla extract. Stir until smooth.
- Pour the pecan mixture into a greased 9×9-inch baking dish, spreading it out evenly.
- Drop spoonfuls of the biscuit batter on top of the pecan mixture, gently spreading it out.
- Bake for 40-45 minutes, or until the top is golden brown and the pecan filling is bubbling.
- Let the cobbler cool for a few minutes before serving.
Notes
Can substitute walnuts or almonds for pecans.
Can add chocolate chips to the filling for extra richness.
For a different flavor, experiment with spices like allspice or ginger.
For extra indulgence, serve with vanilla ice cream.
