Ingredients
- 1 large egg
- 2 egg yolks
- 3 tablespoons cold water
- 1 teaspoon salt
- 2 cups all-purpose flour
Instructions
- Mix Wet Ingredients – In a medium bowl, whisk together the egg, egg yolks, and cold water.
- Add Dry Ingredients – Stir in salt, then gradually mix in the flour until a rough dough forms.
- Knead the Dough – Transfer to a floured surface and knead for 8–10 minutes until smooth and elastic.
- Rest the Dough – Wrap in plastic wrap and let it rest at room temperature for 30 minutes.
- Roll Out & Cut – Divide dough in half, roll each portion into a thin sheet (1/8 inch thick), and slice into thin strips.
- Dry Slightly (Optional) – Let noodles sit for 15–20 minutes for a firmer texture.
- Cook the Noodles – Boil salted water, add noodles, and cook for 2–3 minutes until tender. Drain and serve.
Notes
- Dust noodles with flour before storing to prevent sticking.
- Adjust thickness to preference; thinner noodles cook faster.
