Ingredients
- Fresh cream (raw or pasteurized)
- Salt (optional, to taste)
- Herbs or spices (optional)
Instructions
- Bring the cream to room temperature.
- Pour the cream into a stand mixer fitted with a whisk attachment.
- Turn the mixer on medium to high speed. The cream will first turn into whipped cream, then separate into butter and buttermilk.
- Once the butter and buttermilk have separated, carefully strain the buttermilk into a separate container.
- Rinse the butter under cold water, pressing gently to remove all the buttermilk.
- Shape the butter as desired and add salt or herbs, if desired.
- Store the butter in an airtight container.
Notes
- Don’t throw away the buttermilk; it’s perfect for baking pancakes, biscuits, or even marinating.
- You can also freeze homemade butter for longer storage. Cut it into portions and wrap it tightly in plastic wrap.
- For a unique flavor, try mixing in garlic, rosemary, or Himalayan pink salt.
